bacon and bourbon

Seriously.

no surprise this request came from Captain Mike
and no surprise: Challenge Accepted. 

the biggest question: sweet or savory?!
I decided to go with a twist on a staple and it turned out to be super fun to work through. 

I went with a sweet potato filling with bourbon. Topped with candied bacon, sweet bourbon whipped cream and a maple bourbon reduction sauce.  

I gave the bacon a brown sugar rub then drizzled bourbon and maple syrup on them and had them in the oven for about 20 minutes. 

I topped the baked pie with the delicious candied bits and more brown sugar.  packed up the whipped cream and the sauce and sent it out for delivery for and event in Eugene. 

The votes came in at 19 out of 10! 
Sounds like we did well and are ready for Captain Mikes final verdict

cashew coconut key lime for my favorite lactose intolerant


I asked for requests and Sweet Jen had one!
Dairy free key lime and I did my best to deliver. 

This was so fun! I love dairy enough that I've never tried to replace a creamy base with cashews.  Turns out this beauty was as easy as it's dairy containing counterpart.

Few things are as therapeutic for me as rolling out a double crust and carving out a fun pie top.
This was a classic summer berry mixed pie that I was taking over to a dear friends wine night party.  Red wine and a dark berry pie-we made friends.

A new year in pie

A pie a week for 2016
a lesson in giving, patience, commitment and humility
week 1 started with one of my favorites to make: sweet potato pie
I was winging in through this whole recipe, starting with a guess of how much sweet potato to use.  I was out of whiskey so I used rum instead. And didn’t have the usual pecan crumbles as a base layer.  The result was that it took nearly an hour and a half to cook and the top brown a little prematurely but verdict was it delicious.
I’ll rework this one later in the year and post the recipe.
